Green Chili

A bowl of pulled pork green chili garnished with cilantro and cheese.

This is an amazing slow cooked green chili. Its great for a chili cook off or for family dinners and parties.

Ingredients

Chili

  • 3-4 bounds prok shoulder (boneless is best).

  • 4 tablespoons four

  • 1 teaspoon pepper

  • 1 teaspoon salt

  • 1 tablespoon oil

  • 1 onion

  • 4-5 cloves of minced garlic

  • 1 can canned tomatillos

  • 1-2 cans hot green chilis (spicy to your taste)

  • 1/2 bundle of cilantro

  • 4 cups chicken broth

  • 1-2 jalapenos

  • 14.5 ounces of diced tomatoes

  • 1 tablespoon chili powder

  • 1 teaspoon cumin

  • 1 teaspoon oregano

  • 1 tablespoon cornstarch

  • Salt and pepper to taste

  • 1 tablespoon cold water

  • tortilla strips or chips

Instructions

  1. Start by cutting your pork shoulder into cubes and trimming the excess fat.

  2. Once pork is cubed, toss the pork in salt, pepper, and flour, making sure to coat well.

  3. After prok is covered well, put pork into a frying pan with some oil and brown on all sides. Once prok is browned, remove from the pan and set aside.

  4. In the same pan, cook the onion and garlic for about 3 to 5 minutes.

  5. Once the onion is cooked, put everything into the crockpot. ( pork, onion, and garlic).

  6. In a blender, combine tomatillos, half the chilis, and cilantro, adding a little bit of chicken broth to help blend.

  7. pour the tomatillo mixture into the crockpot and add the rest of the ingredients EXCEPT the cornstarch.

  8. Cook on high for 3-5 hours or on low for 7-8 hours.

  9. After chili has been in the crockpot for at least 6 hours, make a slurry with the cornstarch and water and add it to the chili. Stir, and cover for an additional 30 minutes so chili can thicken up.
