Creamy Parmesan Mushroom Chicken

This chicken is perfect for people who like creamy sauce and mushrooms. It is also a good one pot meal to make for the family.

Ingredients

  • 4 Boneless chicken breasts

  • 2 tablespoons oil

  • salt and pepper to taste

  • 8 ounces sliced mushrooms

    Creamy Parmesan Garlic Sauce

  • 1/4 cup butter

  • 2 minced garlic cloves

  • 1 tablespoon flour

  • 1/2 cup chicken broth

  • 1 cup heavy cream or half and half

  • 1/2 cup grated parmesan cheese

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon pepper

  • 1/2 teaspoon salt

  • 1 cup spinach

Instructions

  1. In a large frying pan, add oil and cook the chicken on medium heat for 3-5 minutes on each side. Or until chicken is browned and cooked fully.

  2. Remove chicken and set aside for later.

  3. Add the mushrooms and cook for 3-5 minutes or until tender. Remove and set aside.

  4. Add the butter to the pan and melt it. Add the garlic and cook until tender.

  5. Whisk in the flour until it thickens, to make a roux.

  6. Whisk in the chicken broth, heavy cream, parmesan cheese, garlic powder, salt and pepper.

  7. Add the spinach and let simmer until it starts to thicken and the spinach wilts.

  8. Add the chicken and the mushrooms back into the sauce and serve.
