Chicken Piccata
This is an easy, yummy chicken piccata. It is good for family dinners. It is also very tasty with angel hair pasta.

Ingredients
2 large chicken breasts cut in half
Salt & pepper to taste
1/2 teaspoon garlic powder
Flour (for dredging)
4 tablespoons butter divided
1 tablespoon olive oil
1/4 cup chicken broth
1 1/4 tablespoon lemon juice + zest of 1 lemon
1 tablespoon brined capers drained
1/2 cup heavy/whipping cream
Instructions
Start off by cutting the chicken breasts in half so you have 4 thin pieces.
Add half the butter (2 tbsp) and oil to a hot pan.
On medium-high heat add the chicken breast and cook for about 4-5 minutes or until the chicken is golden brown.
Remove the chicken from the pan and set aside for later use.
Add the chicken broth, remaining butter (2 tbsp), lemon zest, and capers. Stir and scrape the bottom of the pan to get the brown chicken for extra flavor. Stir for about 3-5 minutes
At this point add the cream and stir until it starts to bubble.
Once cream sauce is bubbling add the chicken back in and cook for about 5-6 minutes or until the chicken is fully cooked.
Once the chicken is fully cooked serve and enjoy.
